Below is a form with two radio fields. The first one is using just labels for the options, the second one is using the format label|value.
Fill the form, and then go to Submissions in the admin area to check the answers to this form. You will notice that you can see the first answer, but not the second.
This happens in any type of field that uses the label|value format for its options.
